It is Sunday, January 30, 2022, and it is a beautiful day in the making. I am sitting at my desk in the front room of the house by a window that overlooks the clear blue skies and sunlit canopy of the trees behind my neighbor’s house. Potatoe is underneath my desk. It is time for him to get a bath, and the cats are not inviting him to snuggle. Trooper is snuggled up without Potatoe on Potatoe’s favorite blanket at the foot of my bed. The kittens are acting like they own the place, lounged out in the center of the bed.
I feel well rested and recovered from an intense, highly productive work week last week, and I am ready to tackle another intense week. I believe that “operation spend the entire weekend in my pajamas” is going to be a success. We never left the house yesterday, and we are on track to do the same today. I needed some downtime, this meant deciding not to run any errands this weekend, cooking at home, and turning down social invites.
I will work for a few hours this morning while Little Chirp sleeps in, but then I will shut down, and Little Chirp and I will enjoy the football games. The Bengals play the Chiefs, and the 49’s play the Rams. I predict that the Chiefs and Rams will win today, thus matching up in Super Bowl 2022. We are rooting for the Rams.
In anticipation of a day of football with Little Chirp and the cooking at home mantra of the weekend, I made my first ever make ahead lasagna yesterday. The recipe uses regular lasagna noodles, specifically NOT no boil noodles, but you do not boil the noodles. You make lasagna at least five hours, up to three days ahead of time and refrigerate it. The noodles soften while it sits in the refrigerator. Here is the recipe – The Best Make Ahead Lasagna – Culinary Hill. I used marinara sauce instead of the cans of tomato sauces and paste. Of course, I did not put sugar in it. That should be outlawed. The make ahead technique seems well thought out. My only issue is that I did not use a deep enough pan. Like I said, this is my first ever lasagna. The end result is that my lasagna has two layers instead of three, and cleaning the oven is in our future after the sauce drips from the pan while it is baking.
At around one in the afternoon, we will know the results of my make ahead lasagna. I hope that this lasagna making is a success. I like having a home cooked meal ready that does not require any work.
I am nervous that my lasagna may be a letdown after the last two meals we enjoyed this weekend. On Friday, Little Chirp made bone in ribeye’s, which were cooked to complete perfection, along with wasabi mashed potatoes. Yesterday, he made turkey breasts with creamy Dijon sauce, which turned out amazing as well. He had left over steak and potatoes for dinner last night, and I get the leftover turkey to take for lunch tomorrow.
